With 124 tanks totaling over 250,000 gallons in tank capacity, all fermentation tanks are fully jacketed and individually temperature controlled. Tanks range from 180 to 5,400 gallons to isolate and handle individual lots. Red fermentations can be either pumped over to specification, open top tanks to be punch-down or Rotary fermentation is also available (www.taylormadenz.com) . Red tank fermenters range in size from 2 to 20 tons in capacity. All red ferment pomace is “dug-out” to maximize free run quality versus pumping macerated skins back to the press. All tanks have individual PC compatible temperature controllers (www.rti2000.com) and can be either heated or cool. Temperature fermentation graphing is capable due to the direct wiring to a PC which provides temperature security alarm protection.
